Go with the carbon steel for a general purpose outdoor knife. It’s easier to sharpen in the field, easy to rework nicks, and will bend at the shank instead of snapping like a stainless blade will do. You will have to maintain it more than stainless but for a good all around field knife go with the carbon steel.
